Everyone’s box includes a bag of frozen garlic scapes this week.  This tasty, under-appreciated vegetable is the young flower shoot from a garlic plant.  The scape gets harvested in June to concentrate the plant’s growth on the bulb.  Use it like a scallion or mild garlic.  We enjoy them chopped in scrambled eggs, minced in pesto, or soaked in olive oil.  Look for Kevin and Tiffany at www.greatlakesgarlicfarm.com or at the Sarah Hardy farmers’ market.
