  • Quick reminder: when you come by to pick up your Meat Club bag, let someone in the store know your last name and we’ll retrieve your bag for you.

Your pasture-raised meat cuts are ready for pickup! Here’s what’s in your bag for Friday, July 19:

Lamb: Lamb shanks and lamb brisket! Lamb brisket is new to us and we weren’t quite sure what to do with it. They’re tiny little briskets but they’d be perfect in the grill or pan-fried or sliced and served in a pita! Check out this recipe for BBQ lamb shanks.

Pork:  We have a great pork mix this week. Bacon and ribs! Some 25 lb. subscribers will see a slightly smaller rack of ribs and the addition of a pound of ground breakfast sausage. 50+ pound subscribers will see larger portions of ribs. You don’t need to be a competition BBQ enthusiast to enjoy easy ribs at home. Check out this recipe for oven-BBQ’d ribs.

Beef:  Huge news this week! All our beef subscribers are receiving a package of our new uncured, natural casing beef (and pork fat) hot dogs! We also included a few packages of our burger patties to round out the perfect weekend grill. Our 50+ pound subscribers will see more patties and the addition of some ground beef.

Some notes about our hot dogs: “Uncured” refers to the use of a natural curing agent (celery powder) instead of commercial nitrates and nitrites. Natural casings give these dogs a classic “snap” off the grill. These dogs are produced with our pastured ground beef with a small amount of our pork fat.

Chicken: Back to whole birds this week! We received our first processed supply of our whole pastured chickens this week.
