What’s for dinner?
Everyone’s boxes look similar by meat type this week. Below is a list of what to expect (there is some variation depending on the weight of your bundle). Your box was packed with end of summer grilling in mind, so don’t put the charcoal away yet!
- Bratwurst: Take a print out of Chad’s Michigan Beer Brats recipe when you collect your box for an extra tasty meal.
- Ground beef and ground lamb: Avoid the “hockey puck” burger! Shape them thinner than you think you should and flatten the middle. Ground lamb is terrific mixed with crumbled goat cheese and mint or basil.
- Bacon and ham: Our hogs are deliciously marbled so the bacon may be fattier than what you are used to. We recommend baking in a cookie sheet on foil, drain the fat once or twice and keep for cooking vegetables. Put the bacon on your burgers. Or wrap the brats in raw bacon before grilling. The ham is precooked so you can thaw and eat (slice for picnic sandwiches). Ham is also great glazed with maple syrup and warmed in the oven.
- Please note that our beef brats are made with pork fat. If you don’t eat pork tell us and we will swap it for hamburger.

A review of collection logistics are below for those of you coming for the first time. Someone will be at home most of the weekend so knock on the door or call if you are unsure. Remember there is no rush to pick up your box if you are busy or travelling.
Expect more recipes for this Meat Club session! Your fellow member Chad Kirchner has graciously offered to provide recipes with each box to assist and inspire the cooks in your household. We want to help make the familiar cuts more tasty and provide guidance for the less common cuts. If you have favorite recipes, please send them to us and we will share with the group. Please also post your meals to Instagram and tag us.
