This is a simple and delicious recipe for roast chicken with crispy skin- definitely one of our favorites! Takes just about an hour in the oven.


  1. Rub the bird in olive oil. Season the chicken inside and out with salt and pepper. If time allows, refrigerate the chicken for an hour or more.
  2. Heat oven to 450 degrees. Place chicken breast side up on a large skillet or roasting pan. (We use tinfoil for easy cleanup). Stuff the cavity with herbs. 
  3. Roast for 50 minutes, then baste the chicken with the juices from the pan. Continue roasting for another 5-10 minutes or until the internal temperature reaches 165º. Let stand 10 minutes under tented foil before carving.
