This is a simple and delicious recipe for roast chicken with crispy skin- definitely one of our favorites! Takes just about an hour in the oven.
- Rub the bird in olive oil. Season the chicken inside and out with salt and pepper. If time allows, refrigerate the chicken for an hour or more.
- Heat oven to 450 degrees. Place chicken breast side up on a large skillet or roasting pan. (We use tinfoil for easy cleanup). Stuff the cavity with herbs.
- Roast for 50 minutes, then baste the chicken with the juices from the pan. Continue roasting for another 5-10 minutes or until the internal temperature reaches 165º. Let stand 10 minutes under tented foil before carving.
