Guten apetit! Bratwurstfest!

Brats, Chucks, Rounds, Legs!
We have a classic assortment of cuts this week. Our beef bundle includes a mix of chuck steaks (great for grilling or for a classic pot roast), round roasts (great for homemade roast beef sandwiches), some ground beef and a few briskets. Our lamb bundle this week includes a beautiful leg of lamb, great for braising or roasting! Our pork bundle is BRATWURST! Farm Manager Dave Waeltz took a trip this winter to Nuremberg, Germany where he visited the Nuremberg Bratwurst Museum and survived for a week on meats, mustard and beer! This is a great week to break out the grill and raise a pint of German lager or pilsner. Scroll to the bottom of this email for a recipe for beer braised onions and brats that’s perfect for Memorial Day Weekend.
A reminder about weekly meat quantities and weights
We want to share a helpful reminder about what to expect each week. We strive to provide an assortment of meats each week and provide as close to one eighth of your full order each week. For our members who (for example) purchased 25 pounds of a given product, we aim to provide around 3.3 pounds of that meat per week. Sometimes we share cuts that are a little bigger or smaller. We keep detailed records of how much meat you receive each week and will ensure that even if your bag feels a little light or a little heavy on any given week, you’ll always get the amount you ordered over the span of 8 weeks.
News from the farm!
Pastures are opening! Our egg-laying hens are enjoying their new home on the pasture alongside their friends the broiler chickens. You will see all of our chickens in the field. We move our broilers in their “chicken tractors” each day to ensure they have fresh grass and bugs to eat along with their usual feed from Hall’s Farm.
Our pigs have moved out to their new home on pasture where they’ll enjoy rotational grazing and assist us in prepping their pasture for planted food the pigs will dig up and eat!
